Happy Diwali from CT Skills

Diwali is the five-day festival of lights, celebrated by millions of Hindus, Sikhs and Jains across the world. The festival, which coincides with the Hindu New Year, celebrates new beginnings and the triumph of good over evil and light over darkness, traditionally celebrated by lighting diyas and candles, praying to Goddess Lakshmi and Lord Ganesh and meeting friends and family to exchange Diwali greetings and gifts.
CT Skills celebrated Diwali with a variety of home-made treats including Samosa’s, Onion Bhajis, Spring Rolls & Indian Sweets with all proceeds going to local hospice, Treetops.
Head of Business Development Kam Penglin  shared her own Chana Masala – Chickpea Curry with staff. She commented

Kam’s Chana Masala – Chickpea Curry Recipe:

Prep Time 15 minutes

Cook Time 30 minutes

Total Time 45minutes

Servings 4


  • 2 cans of chickpeas
  • 2tbsp cooking oil
  • 2 chopped onions
  • ½ can of chopped tomatoes
  • 3 inch of fresh ginger chopped
  • 5 garlic cloves chopped
  • 2 fresh green chillies chopped
  • ½ tbsp garam masala
  • ½ tbsp salt
  • tbsp ground cumin
  • 1tsp turmeric
  • 1 cup of water
  • Fresh coriander


  1. Heat up the oil in a pan and add the garlic.
  2. Once the garlic has browned slightly, add the chopped onions
  3. Stir gently, until onions go soft and start to brown.
  4. Add chopped tomatoes, chopped ginger, green chillies, salt, garam masala & turmeric and stir well.
  5. Let mixture simmer for 5 minutes on a slow heat
  6. Add one cup of boiling water and 2 cans of chick peas to the pan.
  7. Stir, cover with lid and simmer for 15 minutes stirring occasionally
  8. Add chopped coriander to taste
  9. Serve
